Step 1: Activate the Yeast – In a large bowl or the bowl of a stand mixer, combine the warm milk, one tablespoon of the sugar, and the yeast. Let it sit for about 5 to 10 minutes until it becomes foamy. This indicates the yeast is active and ready to use.
Step 2: Mix the Dough – Add the remaining sugar, pumpkin puree, melted butter, egg, pumpkin pie spice, and salt to the yeast mixture. Mix until well combined. Gradually add 3 cups of flour, mixing with a dough hook or wooden spoon. Continue adding flour 1/4 cup at a time until the dough pulls away from the sides of the bowl.
Step 3: Knead the Dough – Knead the dough for about 5 to 7 minutes by hand or using a stand mixer until it is smooth and slightly tacky but not sticky. Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 to 1.5 hours, or until it has doubled in size.
