  • 1 cup pumpkin puree (canned or homemade, not pie filling)
  • 1 large egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Parmesan cheese
  • 2 to 2 1/2 cups all-purpose flour (plus extra for dusting)

Instructions

  1. In a large mixing bowl, combine the pumpkin puree, lightly beaten egg, salt, nutmeg, and Parmesan cheese. Stir these together until the mixture is completely smooth and the spices are evenly distributed.
  2. Gradually add the flour one cup at a time. Mix gently with a fork or your hands until a soft dough begins to form. You want the dough to be slightly sticky but manageable. Avoid overworking the dough, as this can make the gnocchi tough.
  3. Turn the dough out onto a well-floured surface. Gently knead it for about one minute until it holds together. Divide the dough into four equal portions to make it easier to handle.
  4. Take one portion of dough and roll it into a long rope about 1/2-inch thick. Use a sharp knife or a bench scraper to cut the rope into 1-inch pieces. You can leave them as they are or roll them over a gnocchi board or the tines of a fork to create traditional ridges.
  5. Bring a large pot of salted water to a gentle boil. Drop the gnocchi in batches into the water. Once they rise to the surface, let them cook for an additional 30 to 60 seconds. Remove them with a slotted spoon and drain well.
