  • 1 scoop (30g) vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1/2 cup unsweetened almond milk
  • 1/4 cup non-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries (blueberries, raspberries, and diced strawberries)
  • Cooking spray or coconut oil for the pan

Instructions

  1. Step 1: Mix Dry Ingredients – In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, and cinnamon until well combined and free of large clumps.
  2. Step 2: Whisk Wet Ingredients – In a separate smaller bowl, combine the egg, almond milk, Greek yogurt, and vanilla extract. Whisk until the mixture is smooth and the yogurt is fully incorporated.
  3. Step 3: Combine and Fold – Pour the wet ingredients into the dry ingredients bowl. Stir gently with a spatula until just combined. Once the batter is ready, gently fold in the mixed berries, being careful not to overwork the batter.
  4. Step 4: Heat the Pan – Place a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or a small amount of coconut oil. Wait until the pan is hot before adding the batter.
  5. Step 5: Cook the Pancakes – Scoop about 1/4 cup of batter for each pancake onto the skillet. Cook for 2 to 3 minutes until small bubbles form on the surface and the edges appear set. Flip carefully and cook for an additional 1 to 2 minutes until golden brown.
