3 cups old-fashioned rolled oats (gluten-free if needed)
1.5 cups raw pecans, roughly chopped
1/2 cup pure maple syrup
1/3 cup melted coconut oil or unsalted butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt
Instructions
Preheat your oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
In a large mixing bowl, combine the rolled oats, chopped pecans, ground cinnamon, and sea salt. Stir well to ensure the spices are evenly distributed throughout the oats.
In a separate small bowl, whisk together the pure maple syrup, melted coconut oil (or butter), and vanilla extract until the mixture is smooth and well-combined.
Pour the liquid mixture over the dry ingredients. Use a large spatula to toss everything together until every oat and pecan piece is thoroughly coated in the maple mixture. There should be no dry spots left.
Spread the granola mixture in an even layer onto the prepared baking sheet. Press it down slightly with the back of your spatula to help form clumps. Bake for 25 to 30 minutes, stirring gently halfway through. Watch closely toward the end to ensure the pecans do not burn.
Remove the tray from the oven when the granola is golden brown. It will still feel a bit soft, but it will crisp up as it cools. Let it cool completely on the pan for at least 45 minutes before breaking it into clusters.
