Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent the scones from sticking and to ensure even browning.
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, and salt. Ensure there are no large clumps of spices so the flavor is distributed evenly.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or two forks, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. This step is crucial for a flaky texture.
In a separate medium bowl, whisk together the pumpkin puree, heavy cream, egg, and vanilla extract until smooth. Make sure the egg is fully incorporated into the pumpkin mixture.
Pour the wet ingredients into the center of the dry ingredients. Gently fold the mixture together with a spatula just until a shaggy dough forms. Do not overmix, as this will make the scones tough.
Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together, then pat it into an 8-inch circle about 1 inch thick. Use a sharp knife to cut the circle into 8 even wedges.
Place the wedges onto the prepared baking sheet, leaving space between them. Brush the tops lightly with a little bit of heavy cream. Bake for 15 to 18 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
While the scones cool slightly, whisk together the powdered sugar, maple syrup, and enough milk or cream to reach a thick but pourable consistency. Once the scones are warm but not hot, drizzle the glaze generously over the tops.
