  • 2 ½ cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 6 tablespoons ice water
  • 1 cup light brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 2 tablespoons maple syrup (for the filling)
  • 1 tablespoon all-purpose flour (for the filling)
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup (for the glaze)
  • 1 tablespoon milk or heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the 2 ½ cups of flour, granulated sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Gradually add ice water one tablespoon at a time, mixing until the dough just starts to come together. Divide the dough into two equal discs, wrap them in plastic, and refrigerate for at least 30 minutes.
  2. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal.
  3. In a medium bowl, combine the brown sugar, ground cinnamon, 2 tablespoons of maple syrup, and 1 tablespoon of flour. Mix until the ingredients are well combined and have the consistency of wet sand. Set this aside for later.
  4. On a lightly floured surface, roll out one of the chilled dough discs into an 8×8-inch square. Place the dough into the bottom of the prepared baking pan, pressing it gently into the corners to form an even layer.
  5. Spread the brown sugar mixture evenly over the bottom crust, leaving a very small border around the edges. Roll out the second disc of dough into another 8×8-inch square and place it on top of the filling. Gently press the edges down to seal the two layers together.
  6. Prick the top of the dough several times with a fork to allow steam to escape. Bake for 25 to 30 minutes, or until the edges are lightly golden brown. Remove the pan from the oven and let it cool completely on a wire rack.
  7. In a small bowl, whisk together the powdered sugar, 2 tablespoons of maple syrup, milk, and vanilla extract until smooth. Once the bars are cool, spread the glaze evenly over the top. Let the glaze harden for about 20 minutes before cutting the slab into 12 bars.
