  • 1 lb boneless, skinless chicken breast, cut into 1/2-inch cubes
  • 4 slices thick-cut bacon, chopped
  • 2 large sweet potatoes, peeled and diced into small cubes
  • 1 red bell pepper, diced
  • 1 medium yellow onion, finely chopped
  • 3 tablespoons pure maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (if needed)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Step 1: Crisp the Bacon. Place a large skillet over medium heat. Add the chopped bacon and cook until it is brown and crispy. Use a slotted spoon to remove the bacon bits and set them aside on a paper towel-lined plate. Keep the bacon fat in the skillet as it will provide incredible flavor for the rest of the ingredients.
  2. Step 2: Sear the Chicken. Increase the heat to medium-high. Add the cubed chicken breast to the skillet with the bacon fat. Season with half of the garlic powder, smoked paprika, salt, and pepper. Cook for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and set it aside with the bacon.
  3. Step 3: Sauté the Vegetables. If the pan looks dry, add a tablespoon of olive oil. Add the diced sweet potatoes to the skillet. Cover the pan with a lid for 5 minutes to help the potatoes soften. Remove the lid, add the onions and bell peppers, and continue to sauté for another 8-10 minutes. Cook until the potatoes are tender on the inside and crispy on the outside.
  4. Step 4: Combine and Glaze. Return the cooked chicken and bacon to the skillet with the vegetables. Sprinkle in the remaining spices (garlic powder, onion powder, salt, and pepper). Drizzle the maple syrup over the entire mixture. Stir well to coat everything evenly and cook for another 2-3 minutes until the syrup bubbles and creates a light glaze.
  5. Step 5: Garnish and Serve. Remove the skillet from the heat. Taste and adjust seasonings if necessary. Sprinkle the sliced green onions over the top for a fresh pop of color and flavor. Serve immediately while hot.
