  • 4 thick slices of sourdough bread (preferably day-old)
  • 3 large eggs
  • 1/2 cup whole milk or heavy cream
  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Step 1: Whisk the Savory Custard In a wide, shallow bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the chopped parsley and half of the minced garlic. Ensure the mixture is well-combined so the garlic is distributed evenly.
  2. Step 2: Prepare the Garlic Butter In a small microwave-safe bowl, melt 2 tablespoons of the butter. Mix in the remaining minced garlic. This garlic-infused butter will be used to coat the pan and add an extra layer of flavor during the cooking process.
  3. Step 3: Soak the Sourdough Place a slice of sourdough bread into the egg mixture. Let it soak for about 30 to 45 seconds per side. You want the bread to absorb the liquid without becoming so soft that it falls apart. Repeat this for each slice.
  4. Step 4: Sear and Griddle Heat a large skillet over medium heat and add the remaining 2 tablespoons of butter and a drizzle of the garlic-infused butter. Place the soaked bread slices in the pan. Cook for 3 to 4 minutes on each side until they are deep golden brown and crispy.
  5. Step 5: Finish with Cheese If you are using Parmesan cheese, sprinkle it over the top of the slices during the last minute of cooking. Flip the slices briefly to let the cheese create a savory, lacy crust against the pan, then remove and serve immediately.
