1 pound loaf of Challah or Brioche bread, cut into 1-inch cubes
8 large eggs
2 cups whole milk
1/2 cup heavy cream
1/2 cup pure maple syrup
2 teaspoons vanilla extract
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup packed light brown sugar (for topping)

Instructions
Step 1: Prepare the Bread – Grease a 9×13 inch baking dish with butter or non-stick spray. Arrange the cubed Challah or Brioche bread evenly in the dish, ensuring it covers the bottom completely.
Step 2: Whisk the Custard – In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Continue whisking until the mixture is smooth and the spices are well distributed.
Step 3: Soak the Casserole – Pour the egg mixture evenly over the bread cubes in the baking dish. Use a spatula to lightly press down on the bread to ensure every piece is submerged. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
Step 4: Add the Sweet Topping – Preheat your oven to 350°F (175°C). In a small bowl, mix the melted butter, brown sugar, and chopped pecans. Remove the casserole from the fridge and drizzle this mixture evenly over the top.
