Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup whole milk
  • 2 medium apples (Granny Smith or Honeycrisp), peeled and chopped
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk or cream (for glaze)

Instructions

  1. Step 1: Oven and Pan Preparation: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan generously with butter or non-stick cooking spray. You can also line the pan with parchment paper for easy removal.
  2. Step 2: Prepare the Apple Filling: In a small bowl, toss the chopped apples with the brown sugar and ground cinnamon. Stir until the apples are evenly coated and the sugar begins to look wet. Set this aside to let the flavors meld.
  3. Step 3: Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This should take about 2 to 3 minutes with an electric mixer.
  4. Step 4: Add Wet Ingredients: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
  5. Step 5: Mix Dry Ingredients: In a separate medium bowl, whisk together the flour, baking powder, and salt. This ensures the leavening agent is distributed evenly so the bread rises perfectly.
  6. Step 6: Combine the Batter: Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix, as this can make the bread tough.
  7. Step 7: Layer the Loaf: Pour half of the batter into the prepared loaf pan. Spread half of the apple mixture over the batter. Pour the remaining batter on top, followed by the rest of the apples. Use a knife to gently swirl the apples into the batter.
  8. Step 8: Bake the Bread: Place the pan in the center of the oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Step 9: Cool and Glaze: Let the bread cool in the pan for about 10 minutes before moving it to a wire rack. In a small bowl, whisk together the powdered sugar and milk to create a glaze. Drizzle the glaze over the warm bread before serving.
