1 tablespoon chai spice blend (cinnamon, cardamom, ginger, cloves, and a pinch of black pepper)
½ cup unsalted butter, melted and slightly cooled
½ cup packed light brown sugar
¼ cup granulated sugar
1 cup canned pumpkin puree (not pumpkin pie filling)
1 large egg, room temperature
½ cup whole milk
1 teaspoon vanilla extract
For the Coating: ½ cup unsalted butter (melted), ½ cup granulated sugar, and 1 tablespoon chai spice blend
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin with non-stick cooking spray or line them with paper liners. Set the tin aside while you prepare the batter.
In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and the tablespoon of chai spice blend. Ensure there are no large lumps so the spices are evenly distributed throughout the muffins.
In a separate large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the pumpkin puree, egg, milk, and vanilla extract. Whisk vigorously until the mixture is smooth and the egg is fully incorporated.
Gently fold the dry ingredients into the wet ingredients using a spatula. Be careful not to overmix; stir only until just combined and no streaks of flour remain. Overmixing can lead to a tough muffin rather than a tender one.
Divide the batter evenly among the 12 muffin cups. Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and let them cool in the pan for about 5 minutes.
While the muffins cool slightly, prepare the coating. Melt the remaining butter in a small bowl. In another small bowl, mix the sugar and chai spice blend. Dip the top (or the whole muffin) into the melted butter, then roll it in the spiced sugar mixture until generously coated. Serve immediately while warm.
