  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup whole milk
  • For the Coating: 1/2 cup granulated sugar, 1 teaspoon cinnamon, 1/2 teaspoon cardamom, and 1/4 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin with non-stick cooking spray or line with paper liners. Set the pan aside so it is ready for your batter.
  2. In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, cloves, and black pepper. Ensuring the spices are well-distributed will guarantee a consistent flavor in every muffin.
  3. In a separate large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla extract, beating until well combined. Stir in the pumpkin puree and milk until the mixture is uniform.
  4. Gently fold the dry flour mixture into the wet ingredients using a spatula. Mix only until no more streaks of flour remain. Avoid overmixing, as this can make the muffins tough rather than fluffy.
  5. Divide the batter evenly among the 12 muffin cups. Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pan for about 5 minutes.
  6. While the muffins are cooling, prepare the coating by mixing the sugar, cinnamon, and cardamom in a small bowl. Melt the remaining butter in another small bowl. Dip the tops of the warm muffins into the melted butter, then roll them generously in the spiced sugar mixture.
