  • 4 tablespoons unsalted butter, melted
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Step 1: Preheat and Prep – Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin thoroughly with non-stick spray or butter. Avoid using paper liners if you want the “donut” crust to form on the sides of the muffins.
  2. Step 2: Combine Dry Ingredients – In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg. Ensuring these are well-combined helps distribute the spices evenly throughout the batter.
  3. Step 3: Mix Wet Ingredients – In a large bowl, whisk together the pumpkin puree, vegetable oil, granulated sugar, eggs, and vanilla extract until the mixture is smooth and well-incorporated.
