Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Place the garlic on a piece of aluminum foil, drizzle with olive oil, and wrap it tightly. Roast in the oven for about 40 minutes, or until the cloves are soft and golden brown. Let it cool slightly before squeezing the cloves out of the skin.
While the garlic is roasting, slice the avocados in half and remove the pits. Scoop the flesh into a small bowl. Add the lemon juice and sea salt. Use a fork to mash the avocado until it reaches your desired consistency—some people prefer it chunky, while others like it smooth.
Place your bread slices in a toaster or under a broiler until they are golden brown and crisp. Sourdough works exceptionally well here because its slight tanginess complements the sweetness of the roasted garlic.
Take the soft roasted garlic cloves and spread them directly onto the warm toast like butter. Use about 2-3 cloves per slice, depending on your preference. Top the garlic layer with a generous amount of the mashed avocado.
Sprinkle the red pepper flakes over the top for a hint of heat. Add a tiny pinch of extra sea salt if needed. If you are using microgreens or radishes, arrange them on top for a beautiful, fresh finish.
