  • 1 scoop vanilla protein powder
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 medium apple, finely diced
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup low-sugar granola
  • 1 teaspoon lemon juice (to keep apples from browning)

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, vanilla protein powder, maple syrup, cinnamon, and nutmeg. Stir everything together until the mixture is smooth and the protein powder is fully incorporated. If the mixture feels too thick, you can add a splash of milk to reach a spreadable consistency.
  2. Wash and dice your apple into small, bite-sized pieces. In a small bowl, toss the diced apples with a teaspoon of lemon juice and an extra pinch of cinnamon. This keeps the apples looking fresh and adds an extra layer of flavor before they go onto the bark.
  3. Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Pour the yogurt mixture onto the center of the sheet and use a spatula to spread it evenly. Aim for a thickness of about 1/4 to 1/2 inch. Do not spread it too thin, or it will break too easily into small shards.
  4. Evenly distribute the seasoned apple pieces, chopped nuts, and granola over the top of the yogurt. Use your hands or the back of a spoon to gently press the toppings into the yogurt so they stick well once frozen.
  5. Place the baking sheet in the freezer on a flat surface. Let it freeze for at least 3 to 4 hours, or until the yogurt is completely firm and solid to the touch.
  6. Once fully frozen, remove the sheet from the freezer. Lift the parchment paper to peel the bark off the tray. Use your hands to break the bark into large, irregular pieces or use a sharp knife to cut it into squares. Serve immediately or store for later.
