2 large Granny Smith apples, peeled and finely diced
1/2 cup brown sugar, packed
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
1 tablespoon cornstarch
2 tablespoons water
1 cup powdered sugar (for glaze)
2 tablespoons milk (for glaze)
Instructions
In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the diced apples, 1/4 cup of brown sugar, and 1 teaspoon of cinnamon. Cook for 5 to 7 minutes until the apples are tender. In a small bowl, mix the cornstarch and water, then stir it into the apples. Continue cooking for 1 minute until the sauce thickens. Remove from heat and stir in the vanilla extract. Let it cool slightly.
Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish. On a lightly floured surface, roll out your dough into a large rectangle, approximately 12×8 inches. Ensure the thickness is even across the entire surface.
Spread the remaining 2 tablespoons of softened butter over the dough, leaving a small border at the edges. Sprinkle the remaining brown sugar and cinnamon over the butter. Evenly spread the cooled apple filling over the top of the sugar layer.
Starting from the long edge, carefully roll the dough into a tight log. Use a sharp knife or unflavored dental floss to cut the log into 12 even slices. Place the rolls in the prepared baking dish, cut side up.
Place the dish in the oven and bake for 20 to 25 minutes. The rolls should be golden brown on top and the centers should be set. While the rolls bake, whisk together the powdered sugar and milk in a small bowl to create the glaze.
Remove the rolls from the oven and let them cool for about 5 minutes. Drizzle the glaze generously over the warm rolls. Serve immediately while they are soft and gooey.
