  • 1 package (2 1/4 tsp) active dry yeast
  • 1 cup warm milk (about 110°F)
  • 1/2 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 tsp salt
  • 2 large eggs, room temperature
  • 4 to 4 1/2 cups all-purpose flour
  • 2 large Granny Smith apples, peeled and finely diced
  • 1 tbsp butter (for apples)
  • 1/2 cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup powdered sugar
  • 2 tbsp heavy cream or milk
  • 1 tsp vanilla extract

Instructions

  1. In the bowl of a stand mixer, combine the warm milk and a tablespoon of the sugar. Sprinkle the yeast over the top and let it sit for about 5 to 10 minutes until it becomes foamy and bubbly.
  2. Add the rest of the sugar, melted butter, salt, and eggs to the yeast mixture. Mix on low speed until combined. Gradually add the flour, one cup at a time, until a soft dough forms. Knead with a dough hook for 5 to 7 minutes until the dough is smooth and elastic.
  3. Place the dough in a lightly greased bowl. Cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm, draft-free spot for about 1 hour or until it has doubled in size.
  4. While the dough rises, melt 1 tablespoon of butter in a skillet over medium heat. Add the diced apples and sauté for 5 minutes. Stir in 2 tablespoons of the brown sugar and a pinch of cinnamon. Cook until the apples are slightly softened but not mushy. Set aside to cool completely.
  5. Punch down the risen dough and turn it out onto a floured surface. Roll it into a large rectangle (about 12×18 inches). Spread softened butter over the dough, then sprinkle with the remaining brown sugar, cinnamon, and nutmeg. Evenly distribute the cooled apple mixture over the top.
  6. Starting from the long edge, roll the dough up tightly into a log. Cut into 12 even slices using a sharp knife or unflavored dental floss. Place the rolls in a greased 9×13 inch baking dish. Cover and let rise for another 30 to 45 minutes.
  7. Preheat your oven to 350°F (175°C). Bake the rolls for 20 to 25 minutes, or until they are lightly golden brown on top. Do not overbake, as you want them to remain soft.
  8. Whisk together the powdered sugar, cream, and vanilla extract until smooth. Drizzle the glaze over the warm rolls. Serve immediately while still soft and gooey.
