  • 1 cup warm milk (about 110°F)
  • 1/2 cup granulated sugar
  • 1/3 cup melted unsalted butter
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 4 cups all-purpose flour
  • 2 large Granny Smith apples, peeled and finely diced
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup softened butter (for spreading)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons heavy cream or milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the warm milk and one tablespoon of the granulated sugar. Sprinkle the yeast over the top and let it sit for about 5 to 10 minutes until it becomes foamy. This ensures your yeast is alive and ready to make the dough rise.
  2. Add the rest of the sugar, melted butter, salt, and eggs to the yeast mixture. Stir until well combined. Gradually add the flour, one cup at a time, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  3. Place the dough in a lightly greased bowl and cover it with a clean kitchen towel. Let it rise in a warm, draft-free area for about 1 to 1.5 hours, or until it has doubled in size.
  4. While the dough rises, toss the diced apples with the brown sugar and cinnamon in a small bowl. You can lightly sauté the apples in a pan with a teaspoon of butter for 3-5 minutes if you prefer them very soft, then let them cool completely.
  5. Punch down the risen dough and roll it out on a floured surface into a large rectangle (about 12×18 inches). Spread the softened butter all over the dough, then sprinkle the apple and cinnamon mixture evenly across the surface.
  6. Starting from the long edge, roll the dough up tightly into a log. Use a sharp knife or unflavored dental floss to cut the log into 12 even slices. Place the slices in a greased 9×13 inch baking pan.
  7. Cover the rolls and let them rise again for 30 minutes. Preheat your oven to 350°F (175°C). Bake the rolls for 20 to 25 minutes, or until they are a light golden brown. Do not overbake, or they will lose their softness.
  8. Whisk together the powdered sugar, heavy cream, and vanilla extract until smooth. Drizzle the glaze over the rolls while they are still warm so it can seep into the crevices. Serve immediately.
