  • 1 cup apple cider (fresh, unfiltered is best)
  • 1/2 cup buttermilk
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Maple Butter:
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/4 cup pure maple syrup
  • A pinch of sea salt

Instructions

  1. Step 1: Prepare the Maple Butter – In a small mixing bowl, combine the softened butter, maple syrup, and a pinch of salt. Use a hand mixer or a sturdy whisk to beat the mixture until it is smooth, light, and fluffy. Set this aside at room temperature so it remains spreadable.
  2. Step 2: Mix the Dry Ingredients – In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Make sure there are no large clumps of flour to ensure a smooth batter later on.
  3. Step 3: Combine the Wet Ingredients – In a medium bowl, whisk the egg until light. Pour in the apple cider, buttermilk, melted butter, and vanilla extract. Whisk until everything is fully incorporated.
  4. Step 4: Create the Batter – Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold the ingredients together using a spatula. Be careful not to overmix; a few small lumps are perfectly fine and help keep the pancakes fluffy.
  5. Step 5: Heat the Griddle – Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a little butter or cooking spray. To test if it is ready, drop a tiny bit of water on the surface; if it sizzles, you are ready to cook.
