1 can (12.4 oz) refrigerated cinnamon rolls (with included icing)
1/2 cup high-quality apple butter
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 tablespoons melted butter
Optional: 1/4 cup chopped pecans or walnuts
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a standard muffin tin or a 9-inch round baking dish with non-stick cooking spray or a little bit of butter.
Open the can of cinnamon rolls and set the container of icing aside for later. Use a sharp knife or kitchen shears to cut each individual cinnamon roll into four equal-sized quarters.
In a large mixing bowl, whisk together the apple butter, melted butter, ground cinnamon, and vanilla extract until smooth. This mixture will act as the flavor base for your bites.
Add the dough pieces (and chopped nuts if using) to the bowl with the apple butter mixture. Gently toss them with a spatula until every piece of dough is thoroughly coated in the sauce.
Place the coated dough pieces into the prepared muffin tin or baking dish, distributing them evenly. Bake for 13 to 15 minutes, or until the bites have puffed up and the edges are a light golden brown.
Remove from the oven and let cool for 5 minutes. Warm the icing that came with the cinnamon rolls in the microwave for 10 seconds, then drizzle it over the warm bites before serving.
