1/4 cup Maple syrup or honey
1 large Egg, beaten
1 teaspoon Vanilla extract
1 teaspoon Ground cinnamon
1/2 teaspoon Baking powder
1/4 teaspoon Salt
Instructions
Preheat your oven to 400°F (200°C). Grease a standard 6-cup muffin tin thoroughly with cooking spray or use silicone liners to ensure the oatmeal cups don’t stick.
In a large mixing bowl, combine the quick-cooking oats, cinnamon, baking powder, and salt. Stir in the milk, beaten egg, maple syrup, and vanilla extract until the mixture is well-combined and the oats have begun to absorb the liquid.
Gently fold the finely diced apples into the oatmeal mixture. Ensure the apple pieces are small (about 1/4 inch) so they soften quickly during the short baking window.
Divide the mixture evenly among the 6 muffin cups. Press the mixture down slightly with the back of a spoon to ensure they hold their shape after baking.
Place the tin in the oven and bake for 10 minutes. The tops should feel firm to the touch and the edges should be slightly golden. Let them cool in the tin for 2-3 minutes before removing them.
