- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl until well combined.
- Beat the softened butter and sugar together until creamy and light in color.
- Add the egg and vanilla extract to the butter mixture and mix well until fully incorporated.
- Gradually blend in the flour mixture until just combined.
- Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each one.
- Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Combine the heavy cream and chocolate chips in a small saucepan over low heat, stirring until melted and smooth.
- Spread the chocolate filling between two cooled cookies to form a sandwich.
