- 1 lb Mafaldine noodles (or fettuccini/linguini)
- 3 chicken breasts
- 4 tablespoons olive oil
- 4 tablespoons blackened seasoning, divided
- 6 tablespoons butter
- 6–8 cloves garlic, minced
- 2 cups heavy whipping cream
- 1.5 cups shredded parmesan cheese
- Salt and pepper to taste
- 2 tablespoons smoked paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
Instructions
- Pound the chicken breasts to an even thickness. Rub the chicken with olive oil and season it generously with half of the blackened seasoning.
- Heat a skillet over medium-high heat. Once hot, add the seasoned chicken and cook for about 3-4 minutes on one side until it develops a dark amber color. Flip the chicken and reduce the heat to low. Add butter and minced garlic to the skillet, cooking until the internal temperature reaches 165°F. Once done, remove the chicken from the skillet and let it rest under foil.
- In the same skillet, melt the remaining butter. Sauté the garlic until fragrant, then add the heavy cream and the remaining blackened seasoning. Allow the mixture to simmer and thicken for a few minutes, stirring occasionally.
- Cook the Mafaldine noodles according to the package directions. Reserve some of the pasta water before draining. Stir the parmesan cheese into the creamy sauce until melted, then mix in the cooked noodles. Adjust the seasoning with salt and pepper, adding reserved pasta water if necessary for desired consistency.
Notes
Serve hot, topped with sliced chicken and an additional sprinkle of Cajun seasoning. Garnish with freshly chopped parsley or basil.
