  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup whole milk
  • 1 tsp ground cinnamon
  • 1 cup Biscoff spread
  • Whipped cream for topping
  • Biscoff cookies for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing and flouring it to prevent sticking.
  2. Whisk together the flour and baking powder, then set it aside. In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.
  3. Add the flour mixture to the butter mixture and mix until everything is just combined. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Once baked, allow the cake to cool completely in the pan.
  4. Whisk together the evaporated milk, sweetened condensed milk, whole milk, and ground cinnamon. Once the cake is cool, poke holes all over the top using a fork. Pour the milk mixture over the cake, letting it soak in. Spread the Biscoff spread evenly over the soaked cake and chill in the refrigerator for at least 2 hours. Serve topped with whipped cream and garnish with Biscoff cookies.

Notes

For a lighter texture, separate the eggs and beat the egg whites until stiff peaks form before gently folding them into the batter. You can also add a splash of other extracts for a unique twist.
