Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the beets thoroughly, then slice them into wedges.
- Toss the beet wedges with olive oil, salt, pepper, and minced garlic in a large bowl.
- Spread the beets on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
- Remove from the oven, let cool slightly, and garnish with fresh herbs and optional toppings.
Notes
