Ingredients

  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 cloves Garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the beets thoroughly, then slice them into wedges.
  3. Toss the beet wedges with olive oil, salt, pepper, and minced garlic in a large bowl.
  4. Spread the beets on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through.
  5. Remove from the oven, let cool slightly, and garnish with fresh herbs and optional toppings.

Notes

Leftover roasted beets can be stored in an airtight container for up to 3 days. They can also be incorporated into salads or grain bowls.
