Instructions

  1. Begin by preheating your oven to 325°F (160°C). While the oven heats, season the beef chuck roast generously with salt and pepper.
  2. Next, heat olive oil in a large oven-safe pot over medium-high heat. Once the oil is shimmery, add the beef and sear on all sides until a golden brown crust forms, approximately 2-3 minutes per side. Remove the beef and set it aside.
  3. In the same pot, add diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant. Then, toss in the carrots and potatoes, mixing them into the aromatics.
  4. Return the beef to the pot with vegetables. Pour in the beef broth and Worcestershire sauce, ensuring the meat is mostly submerged. Sprinkle in the dried thyme and paprika, stirring gently to combine. Cover the pot with a lid and transfer it to the preheated oven. Bake for about 1 hour, or until the beef is fork-tender.

Use a meat thermometer to check for doneness: The ideal temperature for tender beef is around 190°F (88°C). For an extra depth of flavor, marinate your beef in Worcestershire sauce and spices overnight before cooking.
