Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 red bell peppers, chopped
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tbsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 bay leaf
- Parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the cubed beef to the pot and brown it on all sides.
- Once the beef is browned, add chopped onions and minced garlic.
- Sauté them until they become translucent.
- Stir in the chopped red bell peppers, paprika, salt, and black pepper.
- Pour in the beef broth and diced tomatoes, then add the bay leaf.
- Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 90 to 120 minutes.
- Remove the bay leaf before serving hot, and garnish with fresh parsley.
Notes
For deeper flavor, marinate beef cubes in spices and beef broth before cooking.
