Ingredients

- 1 lb chicken breast, diced
- 2 cups cooked rice
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 1/2 cup Bang Bang sauce (mayonnaise, Sriracha, sweet chili sauce)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add mixed vegetables to the skillet and sauté for another 3-5 minutes until tender.
- Stir in the Bang Bang sauce, mixing well to coat the chicken and vegetables.
- Serve the chicken mixture over cooked rice in bowls. Garnish with chopped green onions and enjoy!
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave, stirring for even heating.
