Description

A delightful fusion of tender chicken, a spicy sauce, and vibrant vegetables served over fluffy rice.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1/2 cup Bang Bang sauce (mayonnaise, Sriracha, sweet chili sauce)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Add mixed vegetables to the skillet and sauté for another 3-5 minutes until tender.
  3. Stir in the Bang Bang sauce, mixing well to coat the chicken and vegetables.
  4. Serve the chicken mixture over cooked rice in bowls. Garnish with chopped green onions and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave, stirring for even heating.
