- ½ cup edamame
- ¼ cup green onions, sliced
- Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with olive oil, salt, and pepper to taste.
- Place the seasoned chicken on a baking sheet and bake for 20-25 minutes or until cooked through.
- Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a bowl.
- Let the chicken rest for a few minutes before slicing into strips.
- Layer cooked brown rice or quinoa, steamed broccoli, shredded carrots, sliced bell peppers, and edamame in a bowl.
- Top with sliced chicken and drizzle generously with the Bang Bang sauce.
- Finish with sliced green onions before serving.
Notes
For added flavor, marinate the chicken in the Bang Bang sauce for an hour before cooking. Customize with your favorite vegetables or grains.
