Description

A delightful fusion dish that combines juicy chicken, fresh vegetables, and a creamy, spicy sauce, perfect for weeknight dinners or meal prep.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup cooked jasmine rice
  • 1/2 cup broccoli florets
  • 1/2 cup carrots, julienned
  • 1/2 cup bell peppers, sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. In a medium bowl, mix mayonnaise, sweet chili sauce, soy sauce, garlic powder, ginger powder, salt, and pepper until smooth.
  2. In a pan, cook the diced chicken over medium heat until fully cooked, about 5-7 minutes.
  3. In the same pan, add broccoli, carrots, and bell peppers. Stir-fry for another 3-5 minutes until the vegetables are tender but still crisp.
  4. Add the cooked chicken back to the pan and mix well with the sauce until everything is evenly coated.
  5. To serve, layer jasmine rice in a bowl, top with the Bang Bang chicken mixture, and garnish with green onions and sesame seeds.

Notes

For a vegetarian option, substitute chicken with roasted cauliflower. You can also use shrimp or tofu as protein alternatives.
