- 1 pound chicken breast, diced
- 1 cup cooked jasmine rice
- 1/2 cup broccoli florets
- 1/2 cup carrots, julienned
- 1/2 cup bell peppers, sliced
- 1/4 cup green onions, sliced
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- In a medium bowl, mix mayonnaise, sweet chili sauce, soy sauce, garlic powder, ginger powder, salt, and pepper until smooth.
- In a pan, cook the diced chicken over medium heat until fully cooked, about 5-7 minutes.
- In the same pan, add broccoli, carrots, and bell peppers. Stir-fry for another 3-5 minutes until the vegetables are tender but still crisp.
- Add the cooked chicken back to the pan and mix well with the sauce until everything is evenly coated.
- To serve, layer jasmine rice in a bowl, top with the Bang Bang chicken mixture, and garnish with green onions and sesame seeds.
Notes
For a vegetarian option, substitute chicken with roasted cauliflower. You can also use shrimp or tofu as protein alternatives.
