  • 1 cup walnuts, chopped
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup heavy cream (for frosting)
  • 2 tablespoons powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Cream together the sugar and softened butter until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. Whisk together flour, baking soda, baking powder, and salt in another bowl.
  5. Add the dry mixture to the banana mix, stirring gently until just combined.
  6. Fold in the chopped walnuts until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes until a toothpick comes out clean.
  9. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
  10. Beat together the heavy cream, powdered sugar, and vanilla extract for the frosting until soft peaks form.
  11. Frost the cooled cake with the whipped cream.
  12. Slice, serve, and enjoy!
