Description

Delicious Banana Bread Muffins that are easy to make and perfect for breakfast or snacks.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and pinch of salt.
  5. Add the sugar, beaten egg, and vanilla extract, stirring until blended.
  6. Gently mix in the flour until just incorporated.
  7. Pour the batter into a greased muffin tin, filling each cup two-thirds full.
  8. Bake in the preheated oven for 18-20 minutes.
  9. Let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

For extra flavor, consider adding nuts or chocolate chips. Store in an airtight container.
