  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown.
  3. Add minced garlic to the skillet and sauté for an additional minute. Pour balsamic vinegar over the chicken, then add cherry tomatoes and mozzarella.
  4. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C). Garnish with fresh basil leaves before serving.

Notes

For added flavor, marinate the chicken in balsamic vinegar for a few hours before cooking. Substitute fresh mozzarella with shredded mozzarella or feta if needed.
