Description
Baked Unagi Sushi Casserole combines the beloved flavors of sushi into a hearty dish that’s perfect for gatherings or simple family meals.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1 lb unagi (grilled eel)
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 cup furikake (Japanese rice seasoning)
- 1/2 cup green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Preheat your oven to 350°F (175°C). Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed sushi rice and water in a pot and bring to a boil. Reduce the heat, cover, and let it simmer for about 20 minutes or until the rice is fully cooked.
- In a small bowl, mix the rice vinegar, sugar, soy sauce, and salt. After the rice is cooked, pour this mixture over it and stir gently to combine.
- Layer half of the seasoned sushi rice in a baking dish, then place the pieces of unagi on top. Add the remaining sushi rice over the unagi, and sprinkle with furikake, green onions, and sesame seeds.
- Bake in the preheated oven for about 25-30 minutes until heated through and lightly golden on top.
- Serve warm, garnished with additional green onions if desired.
Notes
Pair with pickled ginger or wasabi. It makes for fantastic leftovers too.
