Ingredients

  • 2 cups cooked shredded chicken
  • 1 1/3 cup refried beans
  • 1 1/3 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 large flour tortillas
  • 3 tablespoons melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded chicken, refried beans, salsa, shredded cheese, and your favorite spices in a mixing bowl.
  3. Spread about 1/4 cup of filling onto each tortilla and roll them into chimichangas.
  4. Place the chimichangas seam-side down on a baking sheet and brush with melted butter. Bake for 15 minutes, then flip and bake for an additional 10 minutes until golden brown.
