- 4 slices of beef bacon
- 2 large potatoes, diced
- 2 cups kale, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
- Olive oil
Instructions
- Cook the beef bacon over medium heat in a large pot until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add a bit of olive oil to the pot, then add the chopped onion and minced garlic. Sauté until the onion is softened and fragrant, about 3-4 minutes.
- Toss in the diced potatoes and cook for about 5 minutes, allowing them to absorb the flavors.
- Pour in the broth and bring to a boil. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
- Stir in the chopped kale and crumble the crispy bacon back into the soup. Let it simmer for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
