Ingredients

Scale
  • 4 slices of beef bacon
  • 2 large potatoes, diced
  • 2 cups kale, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the beef bacon over medium heat in a large pot until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add a bit of olive oil to the pot, then add the chopped onion and minced garlic. Sauté until the onion is softened and fragrant, about 3-4 minutes.
  3. Toss in the diced potatoes and cook for about 5 minutes, allowing them to absorb the flavors.
  4. Pour in the broth and bring to a boil. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the chopped kale and crumble the crispy bacon back into the soup. Let it simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving.
