Description

Delightfully creamy and full of fruity flavor, this Apricot Custard Tart is a perfect dessert for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 23 tablespoons cold water
  • 1 cup apricot puree (fresh or canned)
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the flour and powdered sugar. Add the chilled butter and mix until crumbly. Stir in the egg yolk and enough cold water until the dough forms.
  3. Roll out the dough on a floured surface and press it into a tart pan. Bake the crust for 15 minutes or until lightly golden.
  4. Whisk together the apricot puree, heavy cream, sugar, eggs, vanilla extract, and a pinch of salt until smooth.
  5. Pour the custard filling into the pre-baked crust, then return the tart to the oven. Bake for an additional 30-35 minutes or until set and slightly golden.
  6. Cool completely before serving.

Notes

Best served chilled or at room temperature. Garnish with fresh apricot slices or a dollop of whipped cream.
