Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix together the almond flour, all-purpose flour, powdered sugar, and salt until well combined.
  3. Cream the softened butter until smooth. Then, add the egg and almond extract, mixing well until fully incorporated.
  4. Add the dry ingredients to the wet mixture gradually. Stir until just combined, being careful not to overmix.
  5. Fold in the sliced almonds and dark chocolate chips for extra flavor.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and shape into a croissant-like form.
  7. Bake for 12-15 minutes or until lightly golden around the edges.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
