Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix together the almond flour, all-purpose flour, powdered sugar, and salt until well combined.
- Cream the softened butter until smooth. Then, add the egg and almond extract, mixing well until fully incorporated.
- Add the dry ingredients to the wet mixture gradually. Stir until just combined, being careful not to overmix.
- Fold in the sliced almonds and dark chocolate chips for extra flavor.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and shape into a croissant-like form.
- Bake for 12-15 minutes or until lightly golden around the edges.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
