  • 1.5 lbs Sirloin steak, Ribeye, or New York Strip (cut into 1-inch cubes)
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Start by cutting your steak into uniform 1-inch cubes. Use a paper towel to pat the meat completely dry. Removing excess moisture is essential for getting a good sear in the air fryer. If the meat is wet, it will steam instead of brown.
  2. In a medium mixing bowl, toss the steak cubes with the olive oil, salt, pepper, garlic powder, and onion powder. Ensure every piece of meat is evenly coated with the oil and spices. Let the meat sit for a few minutes at room temperature to absorb the flavors.
  3. Preheat your air fryer to 400°F (200°C). Once hot, place the steak bites in the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary. Air fry for 6 to 8 minutes, shaking the basket halfway through. For medium-rare, 6 minutes is usually perfect, while 8 minutes will give you a medium finish.
  4. While the steak is cooking, whisk together the melted butter, minced garlic, and fresh parsley in a small bowl. The residual heat from the melted butter will slightly mellow the raw garlic flavor.
  5. Remove the steak bites from the air fryer and transfer them to a clean bowl. Immediately pour the garlic butter mixture over the hot steak and toss well to coat. Serve immediately while hot and juicy.
