Instructions
Start by washing the acorn squash thoroughly. Use a sharp knife to cut the squash in half from the stem to the point. Use a large spoon to scoop out all the seeds and stringy bits from the center. You can save the seeds for roasting later if you like!
Place the flat side of the squash halves down on a cutting board. Carefully slice the squash into 1/2-inch thick half-moon shapes. Leaving the skin on is perfectly fine, as it becomes soft and edible once cooked.
In a large mixing bowl, toss the squash slices with olive oil, salt, pepper, cinnamon, and maple syrup if using. Ensure every piece is evenly coated with the oil and spices for the best flavor and texture.
Place the seasoned squash slices in the air fryer basket. Try to keep them in a single layer to ensure the hot air can circulate around each piece. If your air fryer is small, you may need to cook in two batches.
Set your air fryer to 400°F (200°C). Cook the squash for 15 to 20 minutes. Halfway through the cooking time, shake the basket or use tongs to flip the slices so they brown evenly on both sides.
Once the squash is fork-tender and the edges are slightly charred and caramelized, remove it from the air fryer. Transfer to a serving plate and garnish with fresh herbs for a pop of color and flavor.
