  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 8–10 small corn or flour tortillas
  • 2 cups shredded cabbage or coleslaw mix
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: Creamy chipotle sauce or sour cream

Instructions

  1. Step 1: Prep the Shrimp. Pat the shrimp completely dry with paper towels. This is a crucial step to ensure the breading sticks properly and gets crispy. Season the shrimp lightly with salt and pepper.
  2. Step 2: Prepare the Breading Station. Set up three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk the eggs. In the third bowl, combine the Panko breadcrumbs, smoked paprika, garlic powder, and onion powder.
  3. Step 3: Bread the Shrimp. Dredge each shrimp in the flour, shaking off any excess. Dip it into the beaten eggs, then press it firmly into the seasoned Panko crumbs until fully coated. Repeat for all shrimp.
  4. Step 4: Air Fry until Golden. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil. Place the shrimp in a single layer, ensuring they do not touch. Cook for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and opaque inside.
  5. Step 5: Warm the Tortillas. While the shrimp are cooking, lightly toast your tortillas in a dry skillet over medium heat for about 30 seconds per side until soft and pliable.
  6. Step 6: Assemble the Tacos. Place 3-4 crispy shrimp in each tortilla. Top with shredded cabbage, fresh cilantro, and a squeeze of lime. Drizzle with your favorite sauce and serve immediately.
