2 large sweet onions (like Vidalia or Walla Walla)
1 cup all-purpose flour
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
2 tablespoons milk
2 cups Panko breadcrumbs
Olive oil spray or avocado oil spray
Instructions
Peel the onions and slice them into rounds that are about 1/2-inch thick. Carefully separate the rounds into individual rings. Discard the very small inner centers or save them for another recipe.
Set out three shallow bowls. In the first bowl, whisk together the flour, smoked paprika, garlic powder, salt, and pepper. In the second bowl, whisk the eggs and milk together. In the third bowl, place the Panko breadcrumbs.
Take an onion ring and dip it into the flour mixture, shaking off the excess. Next, dip it into the egg wash, ensuring it is fully submerged. Finally, press it into the Panko breadcrumbs until it is completely coated. Repeat with all rings.
Preheat your air fryer to 375°F (190°C). Place the coated onion rings in the air fryer basket in a single layer. It is important not to overlap them, so you may need to cook in batches. Lightly spray the tops with oil.
Cook for 8 to 10 minutes, flipping the rings halfway through the cooking time. Spray the other side with a little more oil after flipping to ensure even browning. Remove once they are golden brown and crispy.
