  • 1 large sweet onion (such as Vidalia)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups Panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking oil spray (olive oil or avocado oil preferred)

Instructions

  1. Peel the large sweet onion and slice it into rounds that are about 1/2 inch thick. Carefully separate the rounds into individual rings. Select the medium and large rings for the best results, saving the very small centers for another recipe.
  2. Prepare three shallow bowls. In the first bowl, whisk together the flour, smoked paprika, garlic powder, salt, and black pepper. In the second bowl, whisk the eggs and milk together until well combined. In the third bowl, place the Panko breadcrumbs.
  3. Take an onion ring and dredge it in the flour mixture, shaking off any excess. Next, dip it into the egg wash, ensuring it is fully submerged. Finally, press the ring into the Panko breadcrumbs, coating it thoroughly on all sides. Repeat this process for all rings.
  4. Preheat your air fryer to 370°F (188°C). Place the coated onion rings in the air fryer basket in a single layer, ensuring they do not overlap. Lightly spray the tops with oil spray. Cook for 10-12 minutes, flipping them halfway through and spraying again, until they are golden brown and crispy.
