  • 1 lb lean ground beef (85/15 or 90/10 blend)
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, finely minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking oil spray (olive or avocado oil)

Instructions

  1. In a large mixing bowl, combine the ground beef, Panko breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, oregano, onion powder, salt, and pepper.
  2. Use your hands or a large fork to gently mix the ingredients together until they are just combined. Be careful not to over-mix the meat, as overworking it can lead to a tough and dense texture rather than a light and juicy one.
  3. Scoop out about 1 to 2 tablespoons of the mixture at a time and roll it between your palms to form a ball roughly 1.5 inches in diameter. You should end up with approximately 16 to 20 meatballs depending on the size.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with a non-aerosol cooking spray to prevent sticking and to help the exterior of the meatballs xrisp up even more.
  5. Place the meatballs in the air fryer basket in a single layer, making sure they are not touching each other. Cook for 10 to 12 minutes. At the halfway point, gently shake the basket or use tongs to turn the meatballs to ensure even browning.
  6. Once the meatballs reach an internal temperature of 160°F and are golden brown, remove them from the air fryer. Let them rest for 2 to 3 minutes to allow the juices to redistribute before serving.
