  • 1.5 lbs chicken breast, sliced into thin strips
  • 2 large bell peppers (any color), sliced into strips
  • 1 large yellow onion, sliced into half-moons
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning or fajita seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lime, cut into wedges for serving
  • 8 small flour or corn tortillas

Instructions

  1. In a large mixing bowl, combine your sliced chicken breast, bell peppers, and onions. Drizzle the olive oil over the mixture. Sprinkle the taco seasoning, salt, and black pepper evenly across the ingredients. Use your hands or a large spoon to toss everything together until the chicken and vegetables are thoroughly coated in oil and spices.
  2. Turn on your air fryer and set the temperature to 390°F (200°C). Let it preheat for about 3 to 5 minutes. Preheating is a crucial step to ensure the chicken starts searing the moment it touches the basket, which helps lock in the juices.
  3. Place the seasoned chicken and vegetable mixture into the air fryer basket. Try to spread them out as much as possible. If you have a very small air fryer, you may want to cook this in two batches to ensure maximum crispiness and avoid steaming the meat.
  4. Cook the fajita mixture for 15 to 18 minutes. Halfway through the cooking time (at about the 8 or 9-minute mark), remove the basket and give it a vigorous shake. This ensures all sides of the chicken and peppers are exposed to the hot air for even browning.
  5. Check that the chicken has reached an internal temperature of 165°F and the vegetables have charred edges. While the chicken rests for a minute, you can quickly warm your tortillas in a dry pan or the microwave for a few seconds.
