In one small bowl, beat the egg. In a second shallow bowl, combine the Panko breadcrumbs, PTarmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir the dry mixture until well combined.
Dip each zucchini slice into the beaten egg, letting the excess drip off. Then, press the slice into the breadcrumb mixture, ensuring both sides are evenly coated. Press firmly so the crumbs stick to the vegetable.
Preheat your air fryer to 390°F (200°C). Place the coated slices in the air fryer basket in a single layer. Do not overlap them, as they need space for air to circulate. Lightly spray the tops with a bit of cooking oil.
Cook the zucchini chips for 8 to 10 minutes. Halfway through the cooking time, flip the chips over and give them another light spray of oil. They are done when they turn deep golden brown and feel crisp to the touch.
