  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil cooking spray

Instructions

  1. Wash the zucchinis thoroughly and pat them dry. Slice them into even rounds about 1/4-inch thick. If the slices are too thick, they won’t get crispy; if they are too thin, they might burn. Use a paper towel to pat the slices again to remove excess moisture.
  2. Set up three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the egg. In the third bowl, combine the Panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper. Mix the breadcrumb mixture well to distribute the spices.
  3. Take a zucchini slice and dip it into the flour, shaking off the excess. Next, dip it into the beaten egg, ensuring it is fully coated. Finally, press the slice into the breadcrumb mixture, coating both sides firmly. Repeat this for all slices.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Place the zucchini slices in a single layer in the basket. Do not overlap them, as this will prevent them from getting crispy. You may need to cook in batches.
  5. Lightly spray the tops of the zucchini with olive oil spray. Cook for 8 to 10 minutes. Halfway through the cooking time, flip the chips over and give them another light spray of oil. Cook until they are golden brown and crispy.
