2 cups broccoli florets, cut into bite-sized pieces
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 cup snap peas, trimmed
1 large carrot, peeled and sliced into thin rounds
1 cup sliced mushrooms
2 tablespoons sesame oil
3 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon honey or maple syrup
1 teaspoon fresh ginger, minced
2 cloves garlic, minced
1 teaspoon cornstarch
1 tablespoon toasted sesame seeds (for garnish)

Instructions
Wash all your vegetables thoroughly. Cut the broccoli, peppers, carrots, and mushrooms into uniform sizes. This ensures that everything cooks evenly at the same rate. Pat the vegetables dry with a paper towel to help them get that perfect roasted texture.
In a small bowl, whisk together the soy sauce, honey, minced ginger, minced garlic, and cornstarch. Ensure the cornstarch is fully dissolved so you don’t have any white clumps in your sauce. Set this mixture aside for later.
In a large mixing bowl, toss the prepared vegetables with the sesame oil. You want a light, even coating on all the pieces. Do not add the sauce yet, as the sugars in the sauce might burn if cooked for the full duration in the air fryer.
Preheat your air fryer to 380°F (190°C). Place the oiled vegetables in the air fryer basket. Cook for 10 to 12 minutes. At the halfway mark (around 6 minutes), pull the basket out and give it a good shake to redistribute the veggies for even browning.
Once the vegetables are tender and slightly charred, pour the prepared sauce over the veggies directly in the basket or toss them in a bowl with the sauce. Cook for an additional 2 to 3 minutes at 380°F. The heat will thicken the sauce and glaze the vegetables beautifully.
Remove the stir fry from the air fryer. Transfer to a serving dish and sprinkle with toasted sesame seeds and fresh green onions for a pop of color and flavor.
