  • 1 bone-in or boneless turkey breast (approx. 3–4 lbs)
  • 2 tablespoons olive oil or melted unsalted butter
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika

Instructions

  1. Remove the turkey from its packaging and pat it completely dry with paper towels. Removing moisture from the skin is the secret to getting it extra crispy in the air fryer.
  2. In a small bowl, mix the salt, pepper, garlic powder, onion powder, thyme, rosemary, and smoked paprika. Rub the turkey breast all over with olive oil or butter, then generously coat it with the spice blend, making sure to get under the skin if possible.
  3. Set your air fryer to 350°F (175°C) and let it run for about 5 minutes to ensure it is nice and hot before you add the turkey.
  4. Place the turkey breast in the air fryer basket, skin-side down. Cook for 25 minutes. Flip the turkey so the skin-side is now facing up, and cook for another 20 to 25 minutes.
  5. Use a meat thermometer to check the thickest part of the breast. The turkey is safe to eat once it reaches an internal temperature of 165°F (74°C). If it needs more time, cook in 5-minute increments.
  6. Remove the turkey from the air fryer and place it on a cutting board. Tent it loosely with foil and let it rest for at least 10-15 minutes. This allows the juices to redistribute so the meat stays moist when sliced.
