  • 1 (3 to 4 pound) bone-in or boneless turkey breast, thawed completely
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1/2 teaspoon smoked paprika (for color)

Instructions

  1. Remove the turkey breast from its packaging and pat it thoroughly dry with paper towels. Removing excess moisture is the secret to getting extra crispy skin. If there is a netting on the turkey, you can leave it on or remove it depending on your preference, but removing it allows for better seasoning coverage.
  2. In a small bowl, combine the olive oil (or butter), salt, pepper, garlic powder, onion powder, thyme, rosemary, sage, and smoked paprika. Stir until it forms a thick paste. This herb mixture will provide both deep flavor and a beautiful mahogany color to the finished bird.
  3. Rub the herb paste all over the turkey breast, making sure to get it into all the nooks and crannies. If using a turkey with skin, try to gently loosen the skin and rub some of the mixture directly onto the meat underneath for maximum flavor infusion.
  4. Preheat your air fryer to 350°F (175°C) for about 5 minutes. Place the seasoned turkey breast in the air fryer basket. If it is bone-in, place it skin-side down first to ensure the bottom cooks through properly.
  5. Cook the turkey at 350°F for 25 minutes. Carefully flip the turkey breast so the skin side is now facing up. Continue air frying for another 20 to 25 minutes. The turkey is done when a meat thermometer inserted into the thickest part reaches an internal temperature of 165°F (74°C).
  6. Once the turkey reaches the safe internal temperature, remove it from the air fryer and transfer it to a cutting board. Tent it loosely with aluminum foil and let it rest for at least 10 to 15 minutes. Resting allows the juices to redistribute, ensuring every slice is moist.
